Roasting: What do I need?

When it comes to cooking methods, roasting is about as easy as it gets. If you have an oven and a rimmed baking sheet, you can roast! Take it a step further with a roasting rack and pan: The rack sits inside the roasting pan, elevating the meat so air can circulate around it, helping speed the cooking process.
