Papaya-Shrimp Salad

Makes 4 servings

Prep Time: 10 min


  • 2      fresh ripe papayas, chilled
  • 1-1/2 cups chopped cooked shrimp
  • 1      cup chopped celery
  • 1/2   cup toasted slivered almonds
  • 1/2   teaspoon curry powder
  • 1/2   cup mayonnaise
  •         Juice of 1/2-lime
  • 1      lime, quartered


  1. Halve the papayas and remove the seeds.
  2. In a large bowl, mix the shrimp, celery, almonds, curry, and mayonnaise.
  3. Spoon the shrimp mixture into papaya halves.
  4. Sprinkle with lime juice and serve with lime wedges.
