Easy Lasagna Sausage Rolls
Makes 4 servings

Cook Time: 35 min.

Ingredients

8 - dried lasagna noodles
4 - sweet Italian sausage links, halved crosswise
1 - can (15-ounces) extra thick and zesty tomato sauce
1 - can (14.5-ounces) diced tomatoes
1/2 - cup shredded mozzarella cheese (optional)
1 - Tablespoon fresh basil, chopped or 1/2 teaspoon dried basil, crushed

Directions

Cook pasta according to package directions; drain.

  • In large skillet over medium heat, add the sausage and cook until done. 

  • Make sure you turn occasionally. 

  • Drain and cool slightly. 

  • Wrap a noodle around each link and place in skillet.

  • In a bowl, stir together the tomato sauce, un-drained tomatoes and basil. 

  • Now, add it to your skillet. 

  • Bring to boil and reduce heat. 

  • Simmer and cover for 5 to 10 minutes or until heated through. 

  • Remove from heat.

  • You want to sprinkle with shredded mozzarella cheese and garnish with fresh basil. 
  • Let stand 2 minutes if sprinkling with cheese.

Picnicking & Tailgating

Prepare the sauce a day or two ahead.  Reheat in microwave and pour into a thermos to keep hot.  Prepare the noodles the day of the picnic or tailgate party.  Then place in hot thermal container to keep hot.  At your site, just put the sauce and spaghetti together. 

Just put the grate cheese in a plastic container and into the ice chest to keep chilled.  Sprinkle over the spaghetti when ready to chow down.
