Tortellini with Tomato-Sage Sauce

  • 2 - packages (9 oz each) refrigerated cheese tortellini, uncooked
  • 1 - Tablespoon Vegetable Oil
  • 1 - medium onion, chopped (1 med = about 1/2 cup)
  • 2 - cans (14.5 oz each) Diced Tomatoes in Sauce, undrained
  • 1 - teaspoon granulated sugar
  • 2 - Tablespoons chopped fresh sage
  • 1 - cup heavy whipping cream


Cook pasta according to package directions.

  1. In a medium saucepan, heat oil over medium-high heat.
  2. Add onions and cook and stir 3 minutes, or until tender.
  3. Stir in tomatoes with their sauce, the sugar and sage.
  4. Reduce heat to low and simmer 5 minutes, stirring occasionally.
  5. Pour cream into small bowl. Gradually add 1 cup of the hot tomato mixture, stirring constantly with wire whisk until well blended.
  6. Add to remaining tomato mixture in saucepan; stir until well blended.
  7. Cook until heated through, stirring occasionally.
  8. Drain pasta and place on serving platter.
  9. Top with the tomato mixture.
