Smokey Spaghetti and Meatballs

Prep Time: 20 Min.
Cooking Time: 25 Min.

Ingredients:

  •    1  pound lean ground beef
  • 2/3  cup Italian seasoned dry bread crumbs
  • 1/2  cup Light Mayonnaise
  •    1  jar (1 lb. 10 oz.) Pasta Sauce
  • 1 to 2  Tablespoon chopped chipotle peppers in adobo sauce
  •    2  Tablespoon chopped fresh cilantro
  •    8  ounces spaghetti, cooked and drained

Cooking Directions:

  1. In a medium bowl, combine ground beef, bread crumbs and mayonnaise.  Shape into 24 meatballs.

  2. In a 3-quart saucepan, add Pasta Sauce and chipotle peppers bring to a boil over medium-high heat.

  3. Gently stir in meatballs. Reduce heat to low and simmer covered, stirring occasionally, 20 minutes or until meatballs are done. Stir in cilantro.

  4. Serve meatballs and sauce over hot spaghetti and sprinkle, if desired, with queso fresco cheese.
