Chicken and Spinach Manicotti
Makes 6 servings

Prep Time: 25 min. Baking Time: 35 min.
Ingredients:
- 12 uncooked
dried manicotti shells
- 2 1/2 cups low-fat cottage cheese
- 2 cups
cooked chicken strips
- 1/4 cup grated Parmesan
cheese
- 1
package (10-ounce) frozen cut spinach, thawed, well-drained
- 1 egg
- 8 ounces
(2 cups) Mozzarella Cheese, shredded
- 1 jar
(28-ounce) fat free pasta sauce*
Directions:
Preheat oven to 350-degrees F. Spray 13x9-inch baking pan with
no-stick cooking spray. Cook manicotti shells according to package
directions. Drain.

Meanwhile, in medium bowl,
combine cottage cheese, chicken, Parmesan cheese, spinach, egg,
and 1-cup Mozzarella cheese. Mix well.

Fill each manicotti shell with
1/3 cup chicken mixture and place in baking pan.

Pour spaghetti sauce over
filled pasta shells and top with remaining cheese.

Cover and bake for 35 to 40
minutes or until heated through, uncovering during last 5 minutes.
*Substitute your favorite pasta sauce.
Alan's Kitchen Tip Manicotti
can be prepared ahead. Cook pasta shells and prepare sauce and stuff
shells. Cover and refrigerate. Bake at 350-degrees F for 45 to
50 minutes or until heated through, uncovering during last 5 minutes.
