Egg Croquettes

Ingredients

tablespoons butter

tablespoons flour

cup milk

teaspoon salt

cayenne pepper

hard-boiled eggs, chopped

cup bread crumbs

- egg, slightly beaten
Directions

In a saucepan at
low heat, melt butter.

Stir in
the flour and gradually add the milk, salt and cayenne pepper.

Stir until ingredients have thicken.

Remove sauce from
heat, add the chopped eggs and cool.

Shape
into croquettes, roll in crumbs, dip in beaten egg, and fry in deep fat at
365º F about 3-minutes or until golden brown.
Picnicking &
Tailgating
This is a recipe you might want to do just before heading out

you have finished baking, place in plastic container. Just carry in your picnic basket and serve when you reach
your spot.
