Cheesy Easy Mini-Frittata

Total Time: 40 min.

Ingredients

  •    4  eggs
  •    4  egg whites
  •    2  Tablespoon water
  • 1/2  cup chopped seeded tomatoes
  •    1  cup Shredded Reduced Fat Mozzarella Cheese, divided
  •    2  slices Bacon, crisply cooked, crumbled
  • 1/4  cup chopped fresh basil

Directions

Preheat oven to 350F.  Pour into muffin pan which has been sprayed with cooking spray.

  1. Beat eggs, egg whites and water in medium bowl with wire whisk until well blended.

  2. Stir in tomatoes, 1/2 cup of the cheese, the bacon and basil.

  3. Pour into greased 9-inch pie plate.

  4. Bake 20 min. or until puffed and golden brown.

  5. Sprinkle with remaining 1/2 cup cheese.

  6. Bake an additional 3 to 5 min. or until cheese is melted.
