Ingredients

  • 8 - large Eggs
  • 1/2 - cup Whole Milk
  • 1 - cup Cheddar grated
  • 1/3 - cup Cream Cheese cubed
  • 1 - Tablespoon Unsalted Butter
  • 6 - ounces Smoked Ham Steak sliced
  • 1 - cup Green Bell Pepper sliced
  • 2/3 - cup Red Bell Pepper sliced
  • 1/2 - cup Green Onion sliced
  • 1/2 - teaspoon Salt
  • 1/2 - teaspoon Pepper
  • 4 - cups Tortilla Chips
  • Whole Chives (fresh) for garnish

Directions

Preheat oven to 350°F.

  1. Scramble eggs while adding milk and cheeses.
  2. Melt butter in a sauté pan over medium heat.
  3. Sauté ham with peppers and onions for 5 minutes.
  4. Add sautéed ingredients to egg mix while stirring.
  5. Pour egg/vegetable mixture into baking dish, add salt and pepper to taste.
  6. Place chips around edges of baking dish (halfway sticking out).
  7. Cover with foil, bake 350°F for 20-25 minutes.
  8. Garnish and serve.
