Aline Dillinger’s Jumbles Cookies

Ingredients

  • 1 - cup butter
  • 2 - cups sugar
  • 2 - eggs, lightly beaten
  • 2 - cups flour, sifted
  • 1 - lemon, grated rind and juice
  • 1 - grated coconut

Directions

Preheat oven to 350° F. Grease cookie sheets.
  1. Cream butter and sugar, stir in eggs, mix. 
  2. Sift flour into bowl, mix into batter, add lemon juice. 
  3. Fold in lemon rind and coconut. 
  4. Roll out lightly on board sprinkled with powdered sugar, very thin, cut in shapes. 
  5. Place on cookie sheets.
  6. Bake for about 10 minutes.
