Crumb Griddle Cakes
Makes 30 cakes
Ingredients:
Directions:

The night before, soak the bread crumbs
in 1 cup buttermilk.

In the morning, add the well-beaten egg yolks,
baking soda, water, butter, and remaining buttermilk.

Add cornmeal
to make a smooth batter.

Finally, stir in whipped egg whites.
- Pour batter on greased hot griddle and cook until golden brown.

Turn once.
