France's Buckwheat Cakes
Makes 24 cakes

Ingredients:

  • 1 - package active dry yeast
  • 2 - cups water, lukewarm
  • 1 - teaspoon sugar
  • 1 - teaspoon salt
  • 2 - Tablespoons molasses
  • 2 - cups buckwheat flour
  • 1 - teaspoon baking soda
  • 1/4 - cup water

Directions:

  1. In a small bowl, combine the yeast, 1/4-cup water and sugar. 
  2. Allow to foam. 
  3. Place yeast mixture in mixing bowl with salt, molasses, and remaining water. 
  4. Sift in the flour and mix until batter is thin and smooth. 
  5. Cover with plastic wrap and let rise overnight.
  6. In the morning, beat down, dissolve baking soda in water, and mix into the batter. 
  7. Pour batter on greased hot griddle and cook until golden brown. Turn once.
