Toasted Onion Mashed Potatoes
Makes 12 servings
Prep Time: 10 min.
Cooking Time: 23 min.
Ingredients
- 5 - medium (about 10 cups) potatoes,
cut into eighths
- Water
- 2 - teaspoons salt
- 2 - Tablespoons butter
- 3 - cups coarsely chopped onions
- 2 - Tablespoons cold butter
- 1/2 - cup warm milk
- 3/4 - cup sour cream
Directions
- Place potatoes in 4-1/2-quart saucepan or
Dutch oven. Cover with cold water; add salt.
- Bring to a boil over high heat. Reduce heat
to medium and boil potatoes for 15 to 18 minutes or until fork tender.
Drain.
- Meanwhile, melt 2 tablespoons butter until
sizzling in 10-inch nonstick skillet and add onions.
- Cook over medium heat, stirring
occasionally, for 8 to 10 minutes or until onions are brown. Set aside.
- Place cooked hot potatoes in large bowl.
Mash slightly with fork. Beat at medium speed, adding cold butter 1
tablespoon at a time, until mixed.
- Continue beating, gradually adding browned
onions, cold butter, warm milk, and sour cream well mixed.
- Add salt and pepper to taste. (DO NOT
OVERBEAT.) Serve immediately.
