Easy and Simple
Makes 8 servings.
1/2 - cup Original Bisquick® mix
1 - cup evaporated milk
1/2 - cup sugar
2 - Tablespoon butter
1 - teaspoon vanilla
2 - eggs
1 - can (8-1/4 ounces) apricot halves, drained and mashed
1/4 - cup apricot preserves
Sweetened whipped cream, optional
Preheat oven to 350° F. Grease 9-inch pie plate.
Stir together until
In a large mixing bowl, add Bisquick, evaporated milk, sugar,
butter, vanilla, eggs, and canned apricots.
Pour into pie plate. Bake for 35 to 40 minutes or until
knife inserted in center comes out clean.
Cool completely for about
1 hour. Heat preserves over low heat until melted and spread over pie.
Allow to cool. Garnish with whipped cream. Cover and refrigerate any
