Classic Banana Cream Pie
Makes 8 servings.

Ingredients

1/2 - cup plus 2 Tablespoon sugar, divided
1/4 - cup cornstarch
2 - cups milk
2 - eggs yolks, beaten
1/2 - cup butter or margarine
1 - Tablespoon vanilla extract
3 - medium Bananas, firm, peeled & sliced
1 - baked pastry crust (9-inch) 
1 - cup whipping cream

Directions

  • In heavy saucepan, add 1/2-cup sugar, cornstarch and milk. 
  • Stir until smooth. 
  • Heat until boiling. 
  • In a small bowl, stir a small amount of hot milk mixture into beaten egg yolks. 
  • Stir egg mixture sugar-milk mixture. 
  • Cook over medium heat. 
  • Stir until sauce thickens and boils about 5 minutes. 
  • Remove from heat.
  • Next, stir in butter and vanilla.
  • Allow to cool for 15 minutes.
  • Fold in bananas, reserving a few slices for garnish.
  • Spoon filling into baked pastry shell. 
  • Cover and chill 1 hour. 
  • In bowl, whisk cream until soft peaks form, gradually pour in remaining 2 tablespoons sugar and continue whipping until stiff peaks form. 
  • Spread on top of pie.
