Classic Banana Cream Pie
Makes 8 servings.
Ingredients
1/2 - cup plus 2 Tablespoon sugar, divided
1/4 - cup cornstarch
2 - cups milk
2 - eggs yolks, beaten
1/2 - cup butter or margarine
1 - Tablespoon vanilla extract
3 - medium Bananas, firm, peeled & sliced
1 - baked pastry crust (9-inch)
1 - cup whipping cream
Directions
- In heavy saucepan, add 1/2-cup sugar, cornstarch and milk.
- Stir
until smooth.
- Heat until boiling.
- In a small bowl, stir a small
amount of hot milk mixture into beaten egg yolks.
- Stir egg mixture
sugar-milk mixture.
- Cook over medium heat.
- Stir until sauce thickens
and boils about 5 minutes.
- Remove from heat.
- Next, stir in butter
and vanilla.
- Allow to cool for 15 minutes.
- Fold in bananas,
reserving a few slices for garnish.
- Spoon filling into baked pastry shell.
- Cover and chill 1 hour.
- In
bowl, whisk cream until soft peaks form, gradually pour in remaining
2 tablespoons sugar and continue whipping until stiff peaks form.
