Peanut Butter Chip Ice Cream Pie

Pie, Pastry & Tart RecipesMakes 8 servings

Ingredients:

  • 1 quart vanilla ice cream
  • 1 packaged (6 oz.) graham cracker crumb crust
  • Peanut Butter Chip Ice Cream Sauce (recipe below)
  • Chocolate Fudge Sauce (recipe below)

Directions:

  1. Place scoops of ice cream into crust. Cover; freeze until just before serving.

  2. Cut into wedges; serve drizzled with Peanut Butter Chip Ice Cream Sauce and Chocolate Fudge Sauce.

  3. Cover and refrigerate leftover sauce.

Peanut Butter Chip Ice Cream Sauce

  •    1  cup Peanut Butter Chips
  • 1/3  cup evaporated milk
  •    2  Tablespoons light corn syrup
  •    1  Tablespoon butter
  •    1  teaspoon vanilla extract

Directions:

  1. In a small saucepan, stir together Peanut Butter Chips, evaporated milk, light corn syrup and butter.

  2. Cook over low heat, stirring constantly, until chips are melted and mixture is smooth.

  3. Take off from heat and stir in vanilla extract.

Chocolate Fudge Sauce

Ingredients:

  •    3  Tablespoons Cocoa
  • 1/3  cup sugar
  • 1/3  cup evaporated milk
  •    2  Tablespoons butter
  •    1  Tablespoon light corn syrup
  • 1/2  teaspoon vanilla extract

Directions:

  1. In a small saucepan, stir together Cocoa and sugar in small saucepan.

  2. Nest, stir in evaporated milk, butter and light corn syrup.

  3. Cook over low heat, stirring constantly with wire whisk, until mixture boils; boil and stir 1 minute.

  4. Remove from heat and stir in vanilla extract.
