Chocolate Cheese Pie

Pie, Pastry & Tart RecipesMakes 8 servings
Prep Time: 20 min
Chilling Time: overnight


  • 1     package (6-ounce) semi-sweet chocolate pieces
  • 1     package (-ounces) cream cheese, softened
  • 3/4  cup light brown sugar
  • 1/8  teaspoon salt
  • 1     teaspoon vanilla
  • 2     eggs, separated
  • 1     cup cream, whipped, or 1 package (2-ounce) dessert topping
  • 1     graham cracker crust (9-inch)


  1. Over hot water, melt chocolate. Cool 10 minutes.
  2. In a bowl, blend cream cheese, 1/2-cup brown sugar, salt, and vanilla.
  3. Beat in egg yolks (1 at a time).
  4. Beat in cooled chocolate.
  5. In a bowl, beat egg whites until stiff.
  6. Beat in 1/4-cup brown sugar. Beat until stiff and glossy.
  7. Fold chocolate mixture into beaten whites.
  8. Fold in whipped cream.
  9. Pour into prepared crust.
  10. Chill overnight.
