Sugar Free Raspberry Frozen Yogurt
Ice Cream and Frozen Dessert Recipes from AlansKitchen.comMakes 1 quart

Ingredients

  • 1/4 - cup water
  • 1 - teaspoon unflavored gelatin
  • 1 - cup fresh or frozen unsweetened raspberries
  • 12 - packets (1 gram) Equal
  • 1 - cup plain lowfat yogurt, stirred
  • 1 - egg white
  • 1/3 - cup cold water
  • 1/3 - cup nonfat dry milk

Directions

  1. In a small saucepan, combine 1/4-cup water with gelatin and let stand 1 minute. 
  2. Over low heat, cook and stir until gelatin dissolves. Set aside.
  3. In blender or food processor fitted with metal blade, puree berries. Strain; discard seeds. 
  4. Combine pureed berries with Equal and dissolved gelatin. Stir in yogurt.
  5. In a small bowl, combine egg white with 1/3-cup water and dry milk; beat until stiff but not dry. 
  6. Fold into raspberry mixture. 
  7. Pour into ice cream maker according to directions. 

Freeze according to manufacturer's directions.
