Celebration Cupcakes

Ingredients:

  • Cupcakes
    • 2 - cups All-Purpose Unbleached Flour
    • 2 - teaspoons baking powder
    • 1/2 - teaspoon salt
    • 1/2 - cup butter, softened
    • 1-1/4 - cups granulated sugar
    • 1 - teaspoon vanilla extract
    • 2 - eggs
    • 1 - cup reduced fat (2%) milk
  • Frosting
    • 2 - Tablespoons All-Purpose Unbleached Flour
    • 1/2 - cup reduced fat (2%) milk
    • 1/2 - cup butter, softened
    • 1/2 - cup granulated sugar
    • 1 - teaspoon vanilla extract

Directions:

Preheat oven to 375F. Line twenty 2-1/2-inch muffin cups with paper bake cups. Set aside.

  1. In a medium bowl, combine the 2 cups flour, baking powder and salt.
  2. Place the 1/2 cup butter in large mixing bowl.
  3. Beat with an electric mixer on medium speed 30 seconds.
  4. Add the 1-1/4 cups sugar and the 1 teaspoon vanilla; beat until well combined.
  5. Add eggs, one at a time, beating 1 minute after each.
  6. Reduce speed to low; gradually add flour mixture alternately with the 1 cup milk.
  7. Beat just until blended and smooth, scraping bowl with rubber spatula several times.
  8. Fill each muffin cup half full.
  9. Bake 18 minutes or until wooden pick inserted in center of cupcake comes out clean. Remove from pan; cool on wire rack.

Prepare Frosting

  1. Place the 2 tablespoons flour in small saucepan; whisk in the 1/2 cup milk until blended. Heat over low heat until thickened.
  2. Remove from heat. Cover and cool.
  3. Beat the 1/2 cup butter in large mixing bowl with electric mixer on medium speed until fluffy.
  4. Add the 1/2 cup sugar; beat on high speed 4 minutes. Reduce speed to low.
  5. Gradually add milk mixture and the 1 teaspoon vanilla; beat until combined.
  6. Increase speed to high; beat 7 minutes or until light and fluffy.
  7. Frost cupcakes with frosting. Decorate as desired.
