Celebration Cupcakes

Ingredients:
- Cupcakes
- 2 - cups All-Purpose Unbleached Flour
- 2 - teaspoons baking powder
- 1/2 - teaspoon salt
- 1/2 - cup butter, softened
- 1-1/4 - cups granulated sugar
- 1 - teaspoon vanilla extract
- 2 - eggs
- 1 - cup reduced fat (2%) milk
- Frosting
- 2 - Tablespoons All-Purpose Unbleached
Flour
- 1/2 - cup reduced fat (2%) milk
- 1/2 - cup butter, softened
- 1/2 - cup granulated sugar
- 1 - teaspoon vanilla extract
Directions:
Preheat oven to 375F. Line twenty 2-1/2-inch
muffin cups with paper bake cups. Set aside.
- In a medium bowl, combine the 2 cups flour,
baking powder and salt.
- Place the 1/2 cup butter in large mixing bowl.
- Beat with an electric mixer on medium speed 30
seconds.
- Add the 1-1/4 cups sugar and the 1 teaspoon
vanilla; beat until well combined.
- Add eggs, one at a time, beating 1 minute after
each.
- Reduce speed to low; gradually add flour
mixture alternately with the 1 cup milk.
- Beat just until blended and smooth, scraping
bowl with rubber spatula several times.
- Fill each muffin cup half full.
- Bake 18 minutes or until wooden pick inserted
in center of cupcake comes out clean. Remove from pan; cool on wire
rack.
Prepare Frosting
- Place the 2 tablespoons flour in small
saucepan; whisk in the 1/2 cup milk until blended. Heat over low
heat until thickened.
- Remove from heat. Cover and cool.
- Beat the 1/2 cup butter in large mixing bowl
with electric mixer on medium speed until fluffy.
- Add the 1/2 cup sugar; beat on high speed 4
minutes. Reduce speed to low.
- Gradually add milk mixture and the 1 teaspoon
vanilla; beat until combined.
- Increase speed to high; beat 7 minutes or until
light and fluffy.
- Frost cupcakes with frosting. Decorate as
desired.
