Easy Homemade Light Spice Cupcakes
Makes 24 (1 cupcake) servings
Prep Time: 10 minutes
Baking Time: 23 minutes
Ingredients
- 1 - box (18 1/4 ounces) yellow
cake mix
- 2 - teaspoons Pure Vanilla
Extract
- 1 - teaspoon Ground Ginger
- 1/4 - teaspoon Ground Mace or
1/4 teaspoon Ground Nutmeg
- 1-1/4 - cups water
- 1/3 - cup vegetable oil
- 3 - eggs
Directions
Preheat oven to 350°F. Lightly
grease or line 24 muffin cups with paper baking cups; set aside.
- In large bowl with electric
mixer, mix cake mix, vanilla extract, ginger, mace or nutmeg,
water, oil, and eggs on low speed 30 seconds or until moistened.
- Beat at medium speed 2 minutes.
- Spoon batter into prepared
muffin cups, filling each cup two-thirds full.
- Bake 18 to 23 minutes or until
toothpick inserted into cupcake comes out clean.
- Cool completely on wire rack.
- Frost as desired.
