Orange Cupcakes
Makes 24 cupcakes

Cooking Time: 20 min.
Ingredients
- 1-1/4 - cups Granulated Sugar
- 3/4 - cup butter or margarine (1-1/2 sticks), softened
- 3 - eggs, separated
- 3 - cups all-purpose flour
- 4 - teaspoon baking powder
- 1/2 - teaspoon salt
- 1 - cup orange juice
- Pinch salt
- Pinch cream of tartar
- 1 - teaspoon orange rind, finely
grated
- Orange Icing (recipe below)
Directions
Preheat oven to 350°F. Grease
24 muffin cups or line with paper baking cups.
- In large bowl, beat sugar and
butter until fluffy. Beat in egg yolks.
- Combine flour, baking powder and
1/2 teaspoon salt.
- To sugar mixture, add flour
mixture alternating with orange juice.
- In large glass or metal bowl,
beat egg whites with pinch salt and cream off tartar until stiff
but not dry.
- Gently fold into sugar mixture
along with orange rind.
- Fill cups half full.
- Bake 20 minutes or until
toothpick inserted in center comes out clean.
- Frost with Orange Icing.
Ingredients
- 2 - cups Powdered Sugar
- 3 - Tablespoon orange juice
- 1 - teaspoon orange rind, finely
grated
Directions
- In a mixing bowl, add powdered
sugar, orange juice, and orange rind.
- Beat until smooth and spread
icing over cupcakes.
- Let stand until firm.
