Double Orange Cupcakes

Ingredients

  • 1-1/4 - cups Granulated Sugar
  • 3/4 - cup butter or margarine (1-1/2 sticks), softened
  • 3 - eggs, separated
  • 3 - cups all-purpose flour
  • 4 - teaspoon baking powder
  • 1/2 - teaspoon salt
  • 1 - cup orange juice
  • Pinch salt
  • Pinch cream of tartar
  • 1 - teaspoon orange rind, finely grated
  • Orange Icing (recipe below)

Directions

Preheat oven to 350°F. Grease 24 muffin cups or line with paper baking cups.

  1. In large bowl, beat sugar and butter until fluffy. Beat in egg yolks.
  2. Combine flour, baking powder and 1/2 teaspoon salt.
  3. To sugar mixture, add flour mixture alternating with orange juice.
  4. In large glass or metal bowl, beat egg whites with pinch salt and cream off tartar until stiff but not dry.
  5. Gently fold into sugar mixture along with orange rind.
  6. Fill cups half full.
  7. Bake 20 minutes or until toothpick inserted in center comes out clean.
  8. Frost with Orange Icing.

Orange Icing

Ingredients

  • 2 - cups Powdered Sugar
  • 3 - Tablespoon orange juice
  • 1 - teaspoon orange rind, finely grated

Directions

  1. In a mixing bowl, add powdered sugar, orange juice, and orange rind.
  2. Beat until smooth and spread icing over cupcakes.
  3. Let stand until firm.
