Peanut Butter Cupcakes

Makes 18 cupcakes

Ingredients

• 1 - cup packed brown sugar
• 1/2 - cup Peanut Butter
• 1/4 - cup butter or margarine, softened
• 2 - eggs
• 1 - teaspoon vanilla
• 1-1/2 - cups sifted all-purpose flour
• 2 - teaspoons baking powder
• 1/2 - cup milk
• 1 - cup (16-ounce package) semisweet chocolate pieces

Directions

Preheat oven to 350ºF.

1. Cream brown sugar, peanut butter and butter.
2. Beat in eggs and vanilla.
3. Mix flour, baking powder and 1/2 teaspoon salt.
4. Add to creamed mixture alternately with milk, mixing till blended.
5. Spoon a rounded tablespoonful of batter into greased muffin pans or paper bake cups in muffin pans.
6. Place 10 to 12 chocolate pieces in center of each spoonful of batter.
7. Top with a second tablespoonful of batter.
8. Bake in 350ºF oven about 25 minutes or till done.
