Puerto Rico Butter Cookie (Mantecaditos)
Makes about 6 dozen

Ingredients
- 2-1/4 - cups all-purpose flour

1 - stick butter, soft

1/2 - teaspoon vanilla

1/2 - teaspoon almond extract

1/2 - cup vegetable oil
-
chocolate chips
-
almonds
-
cherries
-
colored sugar plums
Directions
Preheat oven to 325° F.
- In a large mixing bowl, mix the flour, butter, vanilla, almond,
and vegetable oil.
- With a teaspoon, make a ball of dough.
- Place on
ungreased cookie sheet.
- Press down with thumb.
- Randomly place the
chocolate chips, almonds, cherries and plums on top of cookie
dough.
- Place in oven and bake for 20 to 25 minutes.
- Place on wire
rack to cool.
