Apple Raisin Cinnamon Oatmeal Cookies
Makes about 4 dozen.

Ingredients

1-1/2 - cups all purpose flour, sifted

1 - teaspoon baking power

1/2 - teaspoon baking soda

1/8 - teaspoon salt

3/4 - cup butter, softened

1 - cup light brown sugar, packed

1 - egg

1 - tablespoon apple juice

1/2 - teaspoon pure vanilla extract

1-1/2 - cups quick oats

1-2/3 - cups cinnamon chips

1 - cup apple, chopped and peeled

1/2 - cup raisins.

Directions

I preheat my oven to 350° F.

  • In a mixing bowl, I sift together the flour, baking powder, baking soda, and salt.

  • In my electric mixer, I add the butter, brown sugar, egg, apple juice, and vanilla.  I beat at medium speed until mixture becomes creamy.

  • I add in the flour mixture and continue to beat until well mixed.

  • Next, I add in the oats.

  • Then I add in the cinnamon chips, apple and raisins.  I continue to mix until ingredients are well mixed.

  • With a teaspoon, I drop dough onto a ungreased cookie sheets.  I space the dough 2 inches apart.

  • Now, I pop the cookies into the oven and bake 10 minutes or until the edges are lightly browned. 

  • I remove cookies from the oven and allow cooling for 1 minute before removing from cookie sheet.  I place the cookies on a wire rack to completely cool.
