Lemmon-Basil Butter Cookies
Southern Home CookingMakes about 36-1/2 dozen cookies

Prep Time: 20 min.
Baking Time: 10 min. (per batch)

Ingredients:

  • 1 - cup fresh lemon-basil leaves
  • 1-3/4 - cups sugar (divided)
  • 1 - pound butter (softened)
  • 1/4 - cup lemon juice
  • 1 - large egg
  • 6 - cups all-purpose flour
  • Lemon-Basil spring (Garnish)
  • Lemon wedges (Garnish)

Directions:

Preheat oven to 350°F.  Lightly grease baking sheets.

  1. In a food processor, process lemon-basil leaves and 1/4-cup sugar until blended.
  2. With an electric mixer at medium speed, beat butter until creamy.
  3. Gradually add remaining 1-1/2 cups sugar (beating well).
  4. Add lemon juice and egg, beat until blended.
  5. Gradually add flour and basil mixture, beating until blended.
  6. Shape dough into 1-inch balls.  On baking sheets, place dough 2 inches apart.  Flatten slightly with bottom of a glass dipped in sugar.
  7. Bake each batch for 8 to 10 minutes or until lightly browned.
  8. Cook cookies on wire racks.
  9. Garnish (if desired).
