Coffee Cake
Makes 10 servings.

Ingredients

4 - eggs, beaten
2 - cups sugar
1 - cup molasses
1 - cup butter
1 - cup strong, hot coffee
4-1/2 - cups all-purpose flour, sifted
1 - teaspoon baking soda
1 - teaspoon cream tartar
1 - teaspoon cloves
1 - teaspoon cinnamon
1 - teaspoon nutmeg
1/2 - cup raisins, chopped

Directions

Preheat oven to 350-degrees F.

  • In a mixing bowl, cream eggs and sugar.  Then stir in the molasses and mix well.  

  • Melt butter in hot coffee and add to the egg mixture.  

  • Sift in to mixture the flour, soda, cream of tartar, cloves, cinnamon, and nutmeg.  

  • Mix the batter until smooth.   

  • Dredge raisins lightly with flour and fold in to the batter.

  • Pour batter into a loaf pan and bake 60 minutes.
