“Absolutely Chocolate” Chocolate Cake
Cake Recipes from AlansKitchen.com Makes 10 to 12 servings.

Ingredients

  • 2 - cups sugar
  • 1-3/4 - cups all-purpose flour
  • 3/4 - cup Cocoa
  • 1-1/2 - teaspoons baking powder
  • 1-1/2 - teaspoons baking soda
  • 1 - teaspoon salt
  • 2 - eggs
  • 1 - cup milk
  • 1/2 - cup vegetable oil
  • 2 - teaspoons vanilla extract
  • 1-  cup boiling water

“Absolutely Chocolate” Chocolate Cake Frosting

  • 1 - stick (1/2 cup) butter
  • 2/3 - cup cocoa
  • 3 - cups powdered sugar
  • 1/3 - cup milk
  • 1 - teaspoon vanilla extract

Directions

Heat oven to 350°F. Grease and flour two 9-inch round baking pans.

  1. In a large bowl, add the sugar, flour, cocoa, baking powder, baking soda and salt. On low speed, stir. 
  2. Next, add the eggs, milk, oil and vanilla. 
  3. On medium speed, beat 2 minutes. 
  4. Stir in boiling water (batter will be thin). 
  5. Pour batter into pans.
  6. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. 
  7. Cool 10 minutes; remove from pans to wire racks. 
  8. Cool completely.

To make frosting

  1. In a saucepan, melt butter. 
  2. Now, stir in cocoa. 
  3. Alternately add powdered sugar and milk, beating to spreading consistency. 
  4. Add small amount additional milk, if needed. 
  5. Stir in vanilla. 
  6. Frost the cake.
