Chocolate Glazed Brownies

Ingredients

  • 1 - cup sugar
  • 2/3 - cup Light Olive Oil
  • 1/4 - cup water
  • 4 - cups semisweet chocolate morsels, divided*
  • 1 - teaspoon vanilla extract
  • 1-1/2 - cups all-purpose flour
  • 1/2 - teaspoon baking soda
  • 1/2 - teaspoon salt
  • 4 - large eggs
  • 1 - cup toasted, chopped pecans, if desired

Directions

  1. In large saucepan, you want to combine sugar, olive oil and water.
  2. Cook over medium-high heat until sugar dissolves.
  3. Add 2 cups of the chocolate morsels and vanilla extract; stir until smooth.
  4. Let chocolate mixture cool for 15 minutes.

Preheat oven to 350� F. Lightly oiled and floured 9x13-inch baking pan.

  1. Add flour, baking soda and salt to cooled chocolate mixture.
  2. Stir in eggs and pecans, if desired.
  3. Spread brownie batter into 9x13-inch baking pan.
  4. Bake at for 25 minutes or until toothpick inserted in the center comes out clean.
  5. Sprinkle remaining 2 cups chocolate morsels evenly over warm brownies.
  6. Let stand 5 minutes to soften and then spread over brownies.
  7. Cool brownies completely on wire rack.
  8. Cut brownies into squares and serve.
