Mocha Bran Brownies

Prep Time: 10 min.
Baking Time: 30 min.

Ingredients:

  • 1 - cup Hershey�s Semi-Sweet Chocolate Chips
  • 1/2 - cup (1 stick) butter or margarine
  • 1/2 - cup sugar
  • 2 - eggs
  • 1 - teaspoon vanilla extract
  • 1/2 - cup crushed oat bran flakes cereal
  • 1/3 - cup water
  • 1/2 - cup all-purpose flour
  • 1 - Tablespoon powdered instant coffee
  • 1/2 - teaspoon salt
  • 1/4 - teaspoon baking soda
  • 1/2 - cup chopped nuts
  • MOCHA FROSTING (recipe follows)

Directions

Preheat oven to 350�F. and grease 8-inch square baking pan.

  1. Place chocolate chips and butter in medium microwave-safe bowl.
  2. Microwave at HIGH (100%) 1 minute or until chips are melted and smooth when stirred and if necessary, microwave at HIGH additional 20 seconds.
  3. Stir in sugar until blended; add eggs and vanilla, beating until well blended.
  4. Stir together cereal and water in medium bowl. Let stand several minutes.
  5. Gradually stir chocolate mixture into bran mixture.
  6. Stir together flour, instant coffee, salt and baking soda; stir into chocolate mixture.
  7. Stir in nuts and spread batter into prepared pan.
  8. Bake 25 to 30 minutes or just until center is set.
  9. Cool completely in pan on wire rack.
  10. Frost with MOCHA FROSTING and cut into squares.

MOCHA FROSTING

Ingredients

  • 2-1/2 tablespoons softened butter or margarine
  • 2 teaspoons Hershey�s Cocoa
  • 1-1/4 cups powdered sugar
  • 1 tablespoon strong coffee
  • 1/2 teaspoon vanilla extract

Directions

  1. Beat butter and cocoa in small bowl.
  2. Gradually add powdered sugar, coffee and vanilla beating until of spreading consistency.
  3. Makes about 1 cup frosting.
