Almond Strawberry Bars

Ingredients:

  • Crumb Mixture Ingredients:
    • 1 1/4 cups all-purpose flour
    • 1/2 cup butter
    • 1/3 cup firmly packed brown sugar
  • Topping Ingredients:
    • 1/2 cup all-purpose flour
    • 1/2 cup firmly packed brown sugar
    • 1/4 cup butter, softened
    • 1/2 teaspoon almond extract
  • Filling Ingredients:
    • 3/4 cup strawberry preserves
  • Glaze Ingredients:
    • 1/2 cup powdered sugar
    • 1/2 teaspoon almond extract
    • 1 to 2 teaspoons milk

Directions:

Preheat oven to 350F. Grease and flour 8-inch square baking pan.

  1. In a small mixer bowl, combine 1 1/4 cups flour, 1/2 cup butter, and 1/3 cup brown sugar.
  2. Beat at low speed, scraping bowl often, for 1 to 2 minutes or until mixture resembles coarse crumbs.
  3. Press on bottom of square baking pan.
  4. Bake for 20 minutes or until edges are lightly browned.
  5. While baking make Topping, in a small bowl, combine 1/2 cup flour, 1/2 cup brown sugar 1/4 cup butter, and almond extract.
  6. Beat at low speed, scraping bowl often, for 1 to 2 minutes or until well mixed. Set aside.
  7. Spread preserves to within 1/8 inch from edge of hot, partially baked crust.
  8. Sprinkle with topping.
  9. Continue baking for 20 to 25 minutes or until edges are lightly browned. Cool completely.
  10. Combine powdered sugar and almond extract in small bowl. Stir in enough milk for desired glazing consistency.
  11. Drizzle glaze over bars.
