Elda's Almond Cookies

Dessert  Recipes from AlansKitchen.comPrep Time: 15 minutes
Baking Time: 15 minutes

Ingredients:

  • 1  cup butter
  • 1  cup confectioner's sugar
  • 4  egg yolks
  • 3  Tablespoons cream
  • 3  cups flour, sifted
  • Icing

    •    2  eggs yolks

    •    2  Tablespoons water

    • 1/4  cup confectioner's sugar

    •    2  cups almonds, blanched & chopped finely

Directions:

Preheat oven to 350 F.

  1. In your electric mixer, cream butter and sugar.  Add the egg yolks and cream.  Sift flour and mix at medium speed for 2 minutes.  

  2. Use the confectioner's sugar to scatter on pastry board and roll dough to 1/4-inch thick.  Using a cookie cutter, cut into diamond shapes.  Place cookie dough on greased baking sheet and bake for 15 minutes.   Allow the cookies to cool.

  3. To make icing, lightly beat egg yolks and stir in water.  You want a thick paste, as gradually add the confectioner's sugar to make the thick paste.   Ice cookies and sprinkle almonds.  Return to oven about 3 minutes to dry.
