Cowboys Daring Beer Stew

IngredientsCowboy Cooking Recipes from

3/4 - cup flour
To taste - salt and pepper
3 - pounds lean beef chuck, cubed
1/2 - cup vegetable oil
1/4 - tomato paste
1/8 - teaspoon thyme
1/8 - teaspoon dry minced garlic
6 - parsley sprigs, chopped
1 - bay leaf
3 - cups beer
6 to 8 - medium carrots, cut into rounds
3 - large onions, diced
Hot, cooked egg noodles


1) In a large plastic bag, add flour, salt, and pepper. Add meat and shake to coat meat evenly.

2) Put oil in a large skillet and heat. Add meat to skillet and brown on all sides.

3) Add tomato paste, thyme, garlic, parsley, bay leaf, and beer to browned meat. Bring to a boil.

4) Reduce heat, partially covered, and simmer 1-1/2 hours. Remove bay leaf.

5) Add carrots and onion and simmer for another hour. Serve with egg noodles.
