Texas Campfire Chili
Makes 4 to 6

Cook: 2-1/2 hours
Ingredients:
- 1-1/2 pounds trimmed chuck (cut into
1/2-inch cubes)

1 medium onion, chopped

1 clove garlic, minced

2 cups spicy tomato juice

1 cup beef broth
-
1 teaspoon Worcestershire sauce

2 Tablespoons chili powder

1/2 teaspoon salt
-
1/4 teaspoon pepper
-
1/4 teaspoon cayenne pepper

1 Tablespoon masa corn flour
-
1 Tablespoon water
Directions:
- In a 4 quart pot, add meat and
onions.
- Brown and drain.
- Next, add the garlic, tomato juice,
broth, Worcestershire sauce, chili powder, salt, pepper and cayenne
pepper.
- Over low heat, simmer for 2 hours
(adding more tomato juice if needed).
- In a small bowl, combine 1 tablespoon
masa with 1 tablespoon water.
- Whisk until smooth.
- Add to bubbling chili and continue
cooking for 15 minutes or until thickened.
