Dutch Oven Wrangler Beans

 Cowboy Cooking Recipes from AlansKitchen.comMakes 8 Servings

Ingredients:

  •       1  pound dried pinto beans
  • 2-1/2  cups cold water
  •    1/2  pound salt pork, cut up
  •       1  red chili pepper
  •       1  medium onion, chopped
  •       1  clove garlic, minced
  •       1  can (6 ounces) tomato paste
  • 1-1/2  Tablespoon chili powder
  •       1  teaspoon salt
  •       1  teaspoon cumin seed
  •    1/2  teaspoon marjoram

Directions:

1) Wash and pick over beans; put in mixing bowl. Cover beans with cold water and soak overnight.

2) Next mornings put beans, water, and salt pork into Dutch oven and bring to a boil; reduce heat.

3) Cover and simmer 1 hour.

4) Stir chili pepper, onion, garlic tomato paste, chili powder, salt, cumin seed, and marjoram; cover and simmer 3 hours or until tender.

5) Add more water if necessary.
