Chicory and Kidney Bean Salad

Makes 4 to 6 servingsCowboy Cooking Recipes from


  • 2 - heads chicory or escarole

  • 1 - can (16-ounces) red kidney beans

  • 1 - medium onion, sliced

  • 3 - Tablespoons olive oil

  • 2 - Tablespoons red wine vinegar

  • To taste - salt and pepper

  • Bread- pita, Italian, or French


  1. Wash the chicory or escarole, discarding the outer leaves.

  2. In a bowl, add kidney beans and liquid.  Mash with a potato masher.

  3. In a large bowl, place the chicory or escarole and pour beans over the top. Add the onion, olive oil, vinegar, salt, and pepper.  Toss and serve with bread.

...another English word for a cowboy, buckaroo, is an Anglicization of vaquero.  At least one linguist has speculated that the word "buckaroo" derives from the Arabic word bakara or bakhara, also meaning "heifer" or "young cow", and may have entered Spanish during the centuries of Islamic rule.
