Chicory and Kidney Bean Salad
Makes 4 to 6 servings
2 - heads chicory or escarole
1 - can (16-ounces) red kidney beans
1 - medium onion, sliced
3 - Tablespoons olive oil
2 - Tablespoons red wine vinegar
To taste - salt and pepper
Bread- pita, Italian, or French
Wash the chicory or
escarole, discarding the outer leaves.
In a bowl, add kidney
beans and liquid. Mash with a potato masher.
In a large bowl, place the
chicory or escarole and pour beans over the top. Add the
onion, olive oil, vinegar, salt, and pepper. Toss and
serve with bread.
