Mama's Cranberry Salad

Makes 8 servingsCowboy Cooking Recipes from AlansKitchen.com

Prep Time: 30 min.
Chilling Time: 8 hrs. or overnight

Ingredients:

  • 2 - packages (3-ounces, each) cherry-flavored gelatin

  • 1-1/4 - cups sugar

  • 3 - cups boiling water

  • 1 - cup diced celery, with strings scrapped and removed

  • 2 - cups fresh cranberries, washed and ground

  • 2 - large oranges, membranes removed from the section pieces

  • 1 - cup chopped pecans

  • Frozen non-dairy topping

Directions:

  1. Mix the gelatin and sugar in a large bowl. Pour the boiling water over the top. Let sit for 15 minutes or until it reaches the consistency of egg whites.

  2. When cool, add cranberries, oranges, and pecans.

  3. Stir and chill for 8 hours or overnight. Serve with frozen non-dairy topping.

...another English word for a cowboy, buckaroo, is an Anglicization of vaquero.  At least one linguist has speculated that the word "buckaroo" derives from the Arabic word bakara or bakhara, also meaning "heifer" or "young cow", and may have entered Spanish during the centuries of Islamic rule.
