German Potato Salad

  • 2 - slice lean bacon, finely chopped
  • 1 - pound new potatoes, quartered
  • 2/3 - cup water
  • 2 - Tablespoon green onions, sliced
  • 3 - Tablespoon light mayonnaise
  • 2 - Tablespoon brown sugar packed
  • 1 - Tablespoon fresh grated onion, with juice
  • 1 - teaspoon spicy brown mustard
  • 3 - Tablespoon cider vinegar
  • lettuce leaves, garnish


  1. In a skillet over medium heat, cook bacon until crisp. Drain on paper-towel-lined plate and set aside.

  2. In 2-quart saucepan, add potatoes and water. Over high heat, bring to boil. Cover and reduce heat to low.  Simmer for 15 to 20 minutes or until tender. Drain.

  3. In medium mixing bowl, put in green onions, mayonnaise, brown sugar, onion, and brown mustard.   Mix ingredients. Stir in the vinegar. Add potatoes and toss to mix.
