Wishbone's Dutch Oven Pork Roast and Sauerkraut

Cowboy Cooking Recipes from AlansKitchen.com Makes 4 to 6 servings

Ingredients

  • 2- Tablespoons olive oil
  • 1 - pork loin roast (1-1/2 to 2 pounds), scored
  • 2 - medium red apples, sliced
  • 1 - onion, sliced
  • 5 - garlic cloves, minced
  • 1 - jar (12-ounces) sauerkraut, drained
  • 1 - cup red or white wine

Directions

Preheat a 12-inch Dutch oven - include lid.

  1. Pour olive oil into hot Dutch oven.  
  2. Add in roast.
  3. Cover pork with apples, onions, garlic and sauerkraut.
  4. Pour wine into oven.
  5. Place Dutch oven on coals.  
  6. Cover and place coals on lid.
  7. Bake 1-1/2 hours or until roast reaches 170° F.
  8. Place roast on a serving platter.
  9. Into a bowl, spoon sauerkraut mixture and let roast set for 10 minutes.
  10. Slice roast and serve with sauerkraut and apples.

Or
Preheat oven to 350° F.

  1. Pour olive oil into hot Dutch oven or roasting pan.  
  2. Add in roast.
  3. Cover pork with apples, onions, garlic and sauerkraut.
  4. Pour wine into oven or pan.
  5. Cover and bake 1-1/2 hours or until roast reaches 170° F.
  6. Place roast on a serving platter.
  7. Into a bowl, spoon sauerkraut mixture and let roast set for 10 minutes.
  8. Slice roast and serve with sauerkraut and apples.
