Wishbone's Dutch Oven Pork Roast and
Sauerkraut
Makes 4 to 6 servings
Ingredients
- 2- Tablespoons olive oil

1 - pork loin roast (1-1/2 to 2 pounds), scored

2 - medium red apples, sliced

1 - onion, sliced
-
5 - garlic cloves, minced
-
1 - jar (12-ounces) sauerkraut, drained

1 - cup red or white wine
Directions
Preheat a 12-inch Dutch
oven - include lid.
- Pour olive oil into hot Dutch
oven.
- Add in roast.
- Cover pork with apples, onions, garlic
and sauerkraut.
- Pour wine into oven.
- Place Dutch oven on coals.
- Cover and place coals on lid.
- Bake 1-1/2 hours or until roast
reaches 170° F.
- Place roast on a serving platter.
- Into a bowl, spoon sauerkraut mixture
and let roast set for 10 minutes.
- Slice roast and serve with sauerkraut
and apples.
Or
Preheat oven to 350° F.
- Pour olive oil into hot Dutch oven or
roasting pan.
- Add in roast.
- Cover pork with apples, onions, garlic
and sauerkraut.
- Pour wine into oven or pan.
- Cover and bake
1-1/2 hours or until roast reaches 170° F.
- Place roast on a serving platter.
- Into a bowl, spoon sauerkraut mixture
and let roast set for 10 minutes.
- Slice roast and serve with sauerkraut
and apples.
