Sirloin Steaks and Salsa
3/4 - cup chopped and seeded tomatoes
2 - green onions with tops, chopped
1/4 - teaspoon
1 - pound boneless beef sirloin steak, cut 3/4-
1/2 - cup finely shredded cheddar cheese
1) In a bowl,
mix tomatoes, salsa, onions, and cumin. Reserve.

size pieces. Place each on a flat surface. Cover with waxed paper
and flatten with bottom of saucepan, mallet, or cleaver to 1/4 -
3) Heat nonstick frying pan over medium-high
heat for 2 minutes. Quickly parboil steaks 1 minute.
Turn steaks and top each with an equal amount of cheese. Cook 1 to
2 minutes and do not overcook.
5) Serve steaks over
reserved salsa. Garnish with cilantro.
Makes 4 servings.
