Sirloin Steaks and Salsa

Ingredients:Cowboy Cooking Recipes from

3/4 - cup chopped and seeded tomatoes
1/2 - cup salsa
2 - green onions with tops, chopped
1/4 - teaspoon ground cumin
1 - pound boneless beef sirloin steak, cut 3/4- inch thick
1/2 - cup finely shredded cheddar cheese
Cilantro sprigs


1) In a bowl, mix tomatoes, salsa, onions, and cumin. Reserve.

2) Trim exterior fat and cut boneless beef sirloin steak into 4 serving size pieces. Place each on a flat surface. Cover with waxed paper and flatten with bottom of saucepan, mallet, or cleaver to 1/4 - inch thick.

3) Heat nonstick frying pan over medium-high heat for 2 minutes. Quickly parboil steaks 1 minute.

4) Turn steaks and top each with an equal amount of cheese. Cook 1 to 2 minutes and do not overcook.

5) Serve steaks over reserved salsa. Garnish with cilantro.

Makes 4 servings.
