Circle E Ranch Beef Stroganoff

Ingredients:Cowboy Cooking Recipes from

3 - Tablespoons butter
1 - onion, diced
1/2 - pound mushrooms, sliced
2 - pounds round steak
2 - Tablespoons flour
1 - teaspoon salt
1 - cup water
2 - Tablespoons tomato paste
2 - cups beef bouillon
1/2 - cup sour cream
2 - cups rice


1) In a skillet, melt 2 Tablespoons butter. Add onion and mushrooms, sauté until onion is tender. Remove with a slotted spoon and set aside.

2) Debone steak and remove excess fat. Cut steak into 2-1/2 inches long and 3/4 inch wide. Add remaining and beef strips to skillet. Brown steak.

3) In a bowl, combine flour and salt. Add water and tomato paste. Mix until smooth. Pour over steak.

4) Simmer steak mixture over low-medium heat until tender, for about 1-1/4 hours.

5) Add onion mixture and bouillon. Bring to a boil.

6) Reduce heat and stir in sour cream. Heat through (do not boil). Serve over rice.
