Chicken Fried Cube Steak

- 1/4 - teaspoon salt
- 1/4 - teaspoon ground
- 4 cube (4-ounce) steaks
- 38 - saltine crackers
- 1-1/2 - cups all-purpose
- 1/2 - teaspoon baking
- 2 - teaspoons freshly
ground black pepper (divided)
- 1/2 - teaspoon ground
- 4-3/4 - cups milk
- 2 - large eggs
- 3-1/2 - cups peanut oil

In a large bowl, whisk
together 3/4-cup milk and eggs. Dredger stakes in
cracker crumb mixture. Then dip in milk mixture, and again

Pour oil into a 12-inch
skillet (do not use a nonstick skillet). Heat oil
to 360° F. Fry steaks 10
minutes. Turn and fry 4 to 5 more minutes or until

and keep steaks warm in oven at 225° F. Carefully drain hot
oil. Keep cooked bits and 1-Tablespoons of drippings
in your skillet.
In a bowl, whish
together remaining 1/4-cup flour, 1-teaoon salt, 1 -
teaspoon black pepper, and 4 cups milk. Pour flour-milk mixture
in skillet. Cook over medium-high heat, whisking
constantly, 10 to 12 minutes or until thickened.
Serve gravy over steaks.
