Baked Pike with Dill
Makes 4 to 6 servings
Preheat oven to 425° F. and butter
Wash the fish, rub the inside with
salt and brush the outside with egg mixture. roll in crumbs, and place on its side
a baking dish. Cut 4 shallow slashes across the fish.
Lay bacon in the slashes. Baked for 40 minutes. Baste with cream several times until
fish begins to brown.
In a skillet, add butter and melt.
Add the onions and sugar and sauté
until golden. Serve the fish on a heated platter,
garnish with the onions. Serve the Dill Sauce separately.
