High Plains Pecan Pie

Ingredients:

• 3       eggs, slightly beaten
• 1/2    cup brown sugar, firmly packed
• 1       cup dark corn syrup
• 1/4    teaspoon salt
• 1/2    teaspoon vanilla
• 1      cup coarsely chopped pecans
• 1      unbaked 9-inch piecrust
•         whipped cream, unsweetened

Directions

1. In a mixing bowl, combine the eggs, sugar, syrup, salt, vanilla, and pecans. 
2. You spoon the ingredients into the 9-inch piecrust.
3. Bake 12 minutes, reduce heat to 350°F and continue cooking 30 minutes.
4. Chill and serve. 
5. Garnish with whip cream.
