Orange Oatmeal Cake

Ingredients:Cowboy Cooking Recipes from

  • 1-1/2 cups fresh orange juice
  • 1 - cup rolled oats
  • 1/2 - cup butter
  • 1 - cup packed brown sugar
  • 2 - eggs
  • 1 - teaspoon vanilla
  • 1-3/4 cups flour
  • 1 - teaspoon baking powder
  • 1 - teaspoon baking soda
  • 1/2 - teaspoon salt
  • 1/4 - teaspoon cinnamon
  • 1-1/2 - Tablespoons grated orange peel
  • 1/2 - cup chopped nuts


Preheat oven to 350-degrees. Grease 13x9-inch baking pan.

1) In a saucepan, boil orange juice and stir in oats. Mix well and set aside.

2) In a bowl, cream together butter and sugar. Add eggs and vanilla, beating until fluffy. In a separate bowl, sift together flour, baking powder, baking soda, salt, and cinnamon.

3) Slowly add dry ingredients and beat into creamed mixture.

4) Stir in oat mixture until well blended. Stir in orange peel and nuts.

5) Pour into baking pan and bake for 35 minutes. When cool, frost with Orange Butter Frosting. [see below]

Orange Butte Frosting


  • 1/2 - cup packed brown sugar
  • 1/4 - cup butter
  • 1-1/3 - Tablespoon grated orange peel
  • 1 - Tablespoon fresh orange juice
  • 1 - cup shredded coconut
  • 1/2 - cup chopped nuts


1) In a saucepan, combine brown sugar, butter, orange peel, and orange juice.

2) Bring to a boil and cook one minute.

3) Stir in coconut and nuts. Set aside to cool.
