Circle AM Chocolate Cake

Cowboy Cooking Recipes from AlansKitchen.comMakes 8 to 10 servings

Ingredients:

  • 1 3/4 - cups all-purpose flour

  • 1 1/2 - cups sugar

  • 1 - teaspoon salt

  • 1 1/4 - teaspoon baking soda

  • 1/3 cup cocoa

  • 1/2 - cup vegetable oil or soft margarine

  • 1 cup milk

  • 2 - eggs

  • 1 - teaspoon vanilla extract

Frosting

  • 2 2/3 - cups confectioner’s sugar

  • 1/3 - cup cocoa

  • 1/3 - cup solid shortening

  • 3 - Tablespoons butter, softened

  • 3 to 4 - Tablespoons strong coffee

Directions:

Preheat the oven to 375° F.  Grease and flour 2 layer pans (preferred glass).

  1. In a large bowl, mix flour, sugar, salt, baking soda, and cocoa. Add oil, milk, eggs, and vanilla. Beat well and pour into pans.

  2. Bake for 40 to 45 minutes or when toothpick comes out clean.

  3. To make frosting: In a medium bowl, all confectioner’s sugar, cocoa, shortening, butter and coffee. Frost cake as desired.
