Gold Miner's Mud Pie

Prep Time: 20 min
Baking Time: 35 min + 10 min

Ingredients:

  • 2         cups sugar
  • 2         sticks butter or margarine
  • 4         eggs
  • 1-1/2   cup all-purpose flour
  • 1/3      cup cocoa
  • 1         cup chopped nuts
  • 3         teaspoon vanilla
  • 1/2      package (10-ounces) miniature marshmallows
  • Frosting:
    • 1      box confectioners sugar
    • 1      stick margarine
    • 1      teaspoon vanilla
    • 1/4 to 1/3   cup evaporated milk
    • 1/3   cup cocoa
    • 1      cup nuts

Directions:

Preheat oven to 300° F.

  1. In bowl, cream sugar and butter.
  2. Add eggs.
  3. Sift flour, cocoa, and salt together and add to creamed mixture. Mix well.
  4. Add nuts and vanilla.
  5. Pour into a 13x9x2-inch baking pan.
  6. Place in oven and bake for 35 min.
  7. Remove from oven.

Increase temperature to 350° F.

  1. Pour marshmallows over top and return to oven for 10 minutes.
  2. Remove from oven and cool 1 hour and then frost.
  3. To prepare frosting: In a medium bowl, add confectioners sugar, margarine, vanilla, evaporated milk, cocoa, and nuts. Mix well.
  4. Spread frosting over top of Mud Pie.
