Janet's See-Through Custard Pie
Makes
1 pie

Baking Time 30 min
Ingredients:
- 8 egg yolks, beaten
- 1/2 pound sugar
- 1/2 pound butter
- 1/2 cup citron (or watermelon rind
preserves, or crystallized ginger), chopped small
- 1/2 cup (scant) rich cream
- 1 rich pastry pie
crust
Directions:
Preheat oven to 350° F.
- In double boiler over low heat, stir egg yolks,
sugar, and butter until custard is somewhat creamy.
- Add cream to custard.
- Stir well and pour over chopped fruit in pastry
shell.
- Bake until custard is set. Custard will be
translucent.
