Janet's See-Through Custard Pie

Baking Time 30 min


  • 8      egg yolks, beaten
  • 1/2   pound sugar
  • 1/2   pound butter
  • 1/2   cup citron (or watermelon rind preserves, or crystallized ginger), chopped small
  • 1/2   cup (scant) rich cream
  • 1      rich pastry pie crust


Preheat oven to 350 F.

  1. In double boiler over low heat, stir egg yolks, sugar, and butter until custard is somewhat creamy.  Add cream to custard.

  2. Stir well and pour over chopped fruit in pastry shell.

  3. Bake until custard is set. Custard will be translucent.
