Old Maid's Vinegar Pie

Prep Time: 20 min
Baking Time: 10 min + 25 min

Ingredients:

  • 2      eggs, separated
  • 1      cup sugar
  • 1      teaspoon cloves
  • 1      teaspoon cinnamon
  • 1/2   cup pecan halves
  • 1/2   cup seedless raisins
  • 1      Tablespoon butter, melted
  • 1      Tablespoon vinegar
  • 1      partially baked 8-inch pie shell

Directions:

Preheat oven to 450° F.

  1. In a bowl, beat egg yolks until light and thick.
  2. Gradually add sugar which has been sifted with cinnamon and cloves.
  3. Add pecans, raisins, and melted butter.
  4. Beat egg whites until stiff but not dry.
  5. Fold gently into egg yolk mixture (do not beat).
  6. As you fold in, add vinegar.
  7. Pour into partially baked pie shell.
  8. Place into oven and bake for 10 minutes.

Reduce heat to 350° F.

  1. Bake for 25 minutes or until the crust and top should be nicely browned.
  2. Cool and serve with unsweetened whipped cream.
