Old Maid's Vinegar Pie
Makes
6 servings
Prep Time: 20 min
Baking Time: 10 min + 25 min
Ingredients:
- 2 eggs, separated
- 1 cup sugar
- 1 teaspoon cloves
- 1 teaspoon cinnamon
- 1/2 cup pecan halves
- 1/2 cup seedless raisins
- 1 Tablespoon butter, melted
- 1 Tablespoon vinegar
- 1 partially baked 8-inch pie shell
Directions:
Preheat oven to 450° F.
- In a bowl, beat egg yolks until light and thick.
- Gradually add sugar which has been sifted with cinnamon and cloves.
- Add pecans, raisins, and melted butter.
- Beat egg whites until stiff but not dry.
- Fold gently into egg yolk mixture (do not beat).
- As you fold in, add vinegar.
- Pour into partially baked pie shell.
- Place into oven and bake for 10 minutes.
Reduce heat to 350° F.
- Bake for 25 minutes or until the crust and top should be nicely
browned.
- Cool and serve with unsweetened whipped cream.
