At Home on the Range Lemon Pie
Makes
1 (9-inch) pie
Prep Time: 20 min
Chilling Time: 4 hrs or overnight
Ingredients:
- 1 envelope unflavored
gelatin
- 1/2 cup cold water
- 5 eggs yolks, beaten
- 1 cup sugar, divided
- 1 lemon rind, grated
- 1/2 cup lemon juice
- 5 egg whites, beaten
- 1 baked pastry pie or
graham cracker crust pie shell
Directions:
- In a double boiler, mix gelatin and water.
- Add egg yolks and 1/2-cup sugar. Mix well.
- Cook for 5 to 7 minutes (stirring constantly)
until is slightly thickened.
- Add lemon rind and juice.
- Chill until mixture mounds when dripped from
spoon.
- Beat egg whites until stiff and slowly add
1/2-cup sugar.
- Beat until very stiff.
- Fold into gelatin mixture and spoon into pie
shell.
- Chill until serving time.
