At Home on the Range Lemon Pie

Prep Time: 20 min
Chilling Time: 4 hrs or overnight

Ingredients:

  • 1     envelope unflavored gelatin
  • 1/2  cup cold water
  • 5     eggs yolks, beaten
  • 1     cup sugar, divided
  • 1     lemon rind, grated
  • 1/2  cup lemon juice
  • 5     egg whites, beaten
  • 1     baked pastry pie or graham cracker crust pie shell

Directions:

  1. In a double boiler, mix gelatin and water.
  2. Add egg yolks and 1/2-cup sugar. Mix well.
  3. Cook for 5 to 7 minutes (stirring constantly) until is slightly thickened.
  4. Add lemon rind and juice.
  5. Chill until mixture mounds when dripped from spoon.
  6. Beat egg whites until stiff and slowly add 1/2-cup sugar.
  7. Beat until very stiff.
  8. Fold into gelatin mixture and spoon into pie shell.
  9. Chill until serving time.
