Range Land Jelly Snowdrops

Ingredient:

  • 1/2 - cup butter
  • 1/4 - cup brown sugar
  • 1 - egg yolk (unbeaten)
  • 1/4 - teaspoon salt
  • 1 - cup flour
  • 1/2 - cup nuts, chopped
  • Tart jelly
  • Meringue
    • 1 - egg white
    • 1/4 - cup sugar

Directions:

Preheat oven to 350° F.

  1. In an electric mixing bowl, add butter and brown sugar. Cream.
  2. Add egg yolk and salt. Cream until light and fluffy.
  3. Add flour and mix in nuts.
  4. Mix together until well blended and moderately stiff.
  5. Using a level teaspoon of dough, put each cookie roll between hands to make a small ball.
  6. Place on ungreased cookie sheet.
  7. Using fingertips, make a depression in center of each ball.
  8. Fill depression with 1/2 teaspoon tart jelly.
  9. In a mixing bowl, beat egg white until stiff and gradually add the 1/4 - cup sugar to make a stiff meringue.
  10. Drop a teaspoon of meringue over center of each cookie being sure that meringue entirely cover jelly.
  11. Bake for 30 minutes or until light golden brown.
  12. Remove to wire rack and cool thoroughly before storing.
