Range Land Jelly Snowdrops
Makes
3 to 4 dozen

Baking Time: 30 min
Ingredient:
- 1/2 - cup butter
- 1/4 - cup brown sugar
- 1 - egg yolk (unbeaten)
- 1/4 - teaspoon salt
- 1 - cup flour
- 1/2 - cup nuts, chopped
- Tart jelly
- Meringue
- 1 - egg white
- 1/4 - cup sugar
Directions:
Preheat oven to 350° F.
- In an electric mixing bowl, add butter and brown
sugar. Cream.
- Add egg yolk and salt. Cream until light and
fluffy.
- Add flour and mix in nuts.
- Mix together until well blended and moderately
stiff.
- Using a level teaspoon of dough, put each cookie
roll between hands to make a small ball.
- Place on ungreased cookie sheet.
- Using fingertips, make a depression in center of
each ball.
- Fill depression with 1/2 teaspoon tart jelly.
- In a mixing bowl, beat egg white until stiff and
gradually add the 1/4 - cup sugar to make a stiff meringue.
- Drop a teaspoon of meringue over center of each
cookie being sure that meringue entirely cover jelly.
- Bake for 30 minutes or until light golden brown.
- Remove to wire rack and cool thoroughly before
storing.
